perity of the whole family and the contentment of the farmhands. She had to cook nourishing meals using a minimum of ingredients to satisfy the hunger of the manual workers. This challenge was made all the more difficult by the need to be economical with the small amount of seasonally available provisi- ons. The notion an open-fire may seem like a pleasant one but the reality was very different and on cloudy days when the chimney wouldn’t draw the smoke, also very unhealthy. Making good use of the by-products from the dairy, and pre- paring the fruit and vegetables from their own garden, as well as helping take care of the livestock left the women with very little spare time. If a daughter had taken over the running of the farm with her husband she was known as a “Hoamatkraxn”. Translated this means that she literally carried the weight of the farm on her shoulders. 15
